CHOWAN BRAND MULLET, LAKE HERRING, AND MACKEREL

Our pails are made of HDPE plastic and the covers have a rubber gasket to prevent leakage.  The four sizes we use are listed below:

The Lake Herring are caught in Lake Superior and processed there.  They are repacked at our plant.

The Mullet are caught local and processed and packed at our plant.

The Mackerel are caught in US waters and processed and packed at our plant.

The pails are shipped without brine to reduce shipping costs.  It is recommended that brine be made and the pail filled to the top.  Keep in a cool place out of direct sunlight.  Refrigeration is not necessary, however keeping the product at or below 60° F will lengthen shelf life.

Recipe for brine:

Use one gallon of cool water in a container larger than 1 gallon.  Stir in 3 lb. of salt until all salt is dissolved.  Fine salt works best.  Using this formula make as much brine as needed to cover fish.  As fish are removed from the pail, place a weight on remaining fish to keep them submerged.
